I made cupcakes for Derek’s sister’s highschool graduation party. I thought they came out pretty well. I think they looked better than they tasted though. Inspiration for the cupcakes. I got the recipe for the frosting from here.

Graduation Weekend

Derek’s sister, Marissa, broke her leg a couple weeks ago. She ended up twisting her ankle real bad going down a a set of stairs and she heard it crack. It was as simple as that. So she had to get her diploma on crutches and her brother Adam pushed her to her seat in a wheel chair. The party at their parents house after was pretty fun, lots of good food and beer. I once again ate waaay too much!

Such a Pretty Fat

I just finished this book a few days ago and I must say it is one of the funniest books I’ve read. It is probably the only one that has ever made me laugh out loud. Jen Lancaster is a great writer and I can not wait to buy her other books. Her footnotes were amusing and even though I didn’t think so at first, it turned out to be a good, progressive story. It’s truthfulness in the situations were scary at points, but somewhat educational at the same time. I found myself repeating many things in the book to my boyfriend because I knew he would appreciate the hilarity of the situation. A lot of memorable moments and overall a great book, I recommend to almost anyone. 4 1/2 out of 5 stars.

Findings


These are cute little matchbook notepads. Found’em on Etsy. They seem a little pricey for what they are, around $5.50 ea. I think I could make one myself : )


I love Michael J. Fox. I saw him on Letterman (I think, I can’t actually remember what show I watched him on) the other night and he was on talking about his new book. He has two memoirs out now, I would also like to read the first one. There have been a lot of positive reviews about the book and I’m just really interested in what he has to say. I will have to pick this up soon!

I made this last night for dinner, it was exceptionally good and surprisingly filling. I absolutely love eggs and I thought adding mushrooms would add some nice extra flavor.


Scrambled Eggs over Asparagus

Ingredients

  • 1 1/2 pounds fresh asparagus, trimmed and cleaned
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt, plus more for seasoning
  • Freshly ground black pepper
  • 6 eggs
  • 3 tablespoons milk
  • 2 tablespoons butter

Directions

Preheat your oven to 425 degrees F.

Clean and trim the asparagus by breaking off 1 asparagus end at its natural breaking point and lining up the tip end next to the remaining stalks. Trim them to the broken asparagus’ length. Compost the woody ends. Lay the asparagus out on a rimmed sheet pan. Drizzle with the olive oil and season with salt and pepper.

Place them in the preheated oven and cook for 15 minutes or until tips are browned and starting to crisp.

In a small cup, crack each egg. Add each egg to a mixing bowl, stir in the milk, and season with salt and pepper.

Beat the egg mixture with a whisk, in a figure 8 pattern until the ingredients are completely blended together. In a nonstick saute pan, melt the butter over medium-low heat. Once butter has melted, add the eggs and cook over low heat, stirring gently with a silicone spatula. Keep the eggs moving, continuing to cook until they are cooked but soft, about 15 to 20 minutes.

Warm the serving platter or serving plates in a preheated low temperature oven, or microwave the plate for 6 to 10 seconds. Scatter roasted asparagus on the heated plate, and spoon the scrambled eggs over the asparagus. Eat immediately and enjoy!

5K Personal Record!

I ran a 5K race today and I kind of decided to do it last minute. I figured this weekend was my only chance this month because I am going to be busy for the next few. I am trying to run at least one race every month. It is my first 5K of the year, that last one I ran was September ’08 and I beat my time by 3 minutes! Today I came in at 24:42, that is a 7:58 pace! I am so excited, I didn’t even know I was capable of that! It was tough competition and my only goal was to come in under 26 minutes. I couldn’t believe how well I did, I really pushed myself though and it was so worth it. I absolutely love running races, they are so addicting! I always feel like I could’ve done better after I am done, ha! I really feel like if I train hard to run fast then I could totally place and get some kind of medal. I want to win an award so badly! I don’t even really try that hard to run fast, it comes pretty naturally. 


I also went hiking with my sister and Scott, it was actually more like wandering in the woods because we ended up taking the wrong trail. It was fun though and I want to go again, but actually make it up to the summit next time. I took a couple good pictures, but I will have to post them later, I don’t feel like it right now.

I worked first shift today. It was pretty rough working til 10 last night and then going back in today at 7am! I went straight to the mall after work so I could buy a red sox hat. I am going to a Red Sox game next thursday against the Yankees. I’m really excited, it will be my first baseball game ever. I have trouble finding things that fit my head, I apparently have a tiny head! I thought I was going to have to buy a children’s hat, but I got lucky and found this awesome one and it fit nicely.



I also went out to see ‘Angels and Demons’ with my Mom. The movie was good, fast paced and very much enthralling. Though a little long, things could have been cut out here and there, but overall I enjoyed it very much. My mom liked it too. Now, I just have to read the book, ha! I brought her out to dinner to Applebees after the movie (she loves it there) and we had a good dinner. I got a quesadilla burger and I ate it like I’ve never had meat before in my life! It was so good and I don’t know why but I’ve been having this huge craving for meat recently, weird. Now I’m stuffed.

Tomorrow I am running a 5K race in the morning and then I am going hiking with my sister Kerri and Scott. It should be a fun day. I think I will wear my new hat!
